Cremiges Polenta ist so lecker. Und ich vergesse es immer. Dabei ist es auch noch sehr einfach zu machen. Ich habe dieses Rezept im Instant Pot (ein elektrischer Schnellkochtopf) gemacht. Ich liebe den Instant Pot, da er sehr praktisch ist. Alles rein, Deckel drauf, einstellen und warten bis das Essen fertig ist :D
Für dieses Rezept habe ich leider keine Anweisungen für die Zubereitung auf dem Herd, aber auf der Polenta-Packung sollten Anweisungen stehen. Meine Verpackung habe ich leider gleich nach dem Kauf entsorgt, da ich zuhause alles in Schraubgläser umfülle.
Polenta schmeckt warm am besten. Reste werden nämlich fest und sind nicht mehr cremig. Aber falls doch mal Reste anfallen, fülle ich sie sofort in eine flache, eckige Frischhaltedose. Wenn es komplett kalt ist oder eine Nacht im Kühlschrank verbracht hat, kann das Polenta aus der Dose stürzen und in Scheiben schneiden. In etwas Öl gebraten kann man daraus eine neue Mahlzeit kreiieren, die ebenso lecker ist.

| Gebratene Polentascheiben mit einer Tomaten-Joghurt-Sauce und sautiertem Gemüse |
Zutaten:
200g Polenta
1 Liter Gemüsebrühe
Schwarzer Pfeffer, gemahlen
50g veganen Kräuterfrischkäse
Frühlingszwiebelringe
Zubereitung:
1. Polenta und Gemüsebrühe in den Instant Pot füllen. Gut umrühren.
2. Deckel schließen und den Porridge-Knopf drücken (20 Minuten, High Pressure). Nach der Kochzeit etwa 10-15 Minuten warten bis der Druck sich von alleine normalisiert hat.
3. Dann den Frischkäse und die Frühlingszwiebelringe hinzugeben. Schwarzen Pfeffer nach Geschmack hinzufügen. Alles vermengen und heiss servieren!

Super, wieder ein Rezept, das ich mit meiner Fructoseintoleranz vereinbaren kann. :) Das ist echt höllisch schwer, bei all den Sachen, auf die man achten muss, weil in ihnen Fructose enthalten ist.
